Everyone knows that Italian ice cream is absolutely outstanding, and our recent family holiday to Pisa gave us plenty of proof of that. However, until my daughter and I stopped by the Paniko Gelateria in Lucca, I had not appreciated that it is truly a craft. The owners were very friendly and were happy to talk about the process while I sampled their incredible raspberry sorbet and pistachio ice cream.

The owner explained that they make ice cream in small batches with simple ingredients. They had just finished make raspberry ice cream from fresh fruit puree, cream and only a small amount of sugar. I LOVED the fact that the ice cream in Italy tasted of fruit, not sugar. They recommended only to buy from shops that had ice cream makers in the shop itself, as this makes it clear they hand craft their own ice cream. Lucca is a beautiful place to visit, and if you go there, definitely sample Paniko's wares! Travelling is so good for the soul. In Italy, you feel inspired by so many aspects of their culture and crafts - including ice cream making!
